The 3 Buckets system always been seen in Cruise Passenger Ships to follow the Sanitation standards of Publich Health (PH).
3 buckets need to b prepared on all work stations with a number of different mixtures to be used for cleaning. It's nickname is the 3 bucket system or some say WRS ( Wash, Rinse & Sanitize).

Wash--> Rinse--> Sanitize--->Air Dry

1. Wash- wash with warm water and good detergent in the RED bucket -Minimum 95°F-110F

2. Rinse- rinse with plain hot water in GREY bucket

3. Sanitize- sanitize with chlorine 50-100ppm mixed in White bucket(approve sanitizing solution) (100ppm = 1 cap of chlorine/bucket – use test strips) - 75°F for 30 secs.

Important Points:
* Let Air Dry the surface. (Do Not Wipe the surface with cloth or Never use Hand Towel paper).
* Change Chlorine solution Water every four hours or when its Dirty.
* Use Clean Buckets and Clean Rugs all the time.
* When the cooks use any Food contact surface the contact surface area has to be cleaned from start to end.
* Sanitize the surfaces, Handles with the chlorine and water mixture wvery 30 to 90 Mins.
* Maintain the Hygiene.

1. Clean surface using soap solution and A Scrubber
2. Wipe/Wash surface with water.
3. Sanitise using the sanitising solution.
